Let starfruit sit on your kitchen counter and ripen to the color you want.
It’s tart if it still has some green on it. It’s sweet if it’s yellow. You’ll get the most flavor when it’s a deep yellow. Enjoy that deep yellow starfruit within a day or two.
Starfruit’s ribs will brown as it ripens. You can trim with a veggie peeler, if desired.
