SlimCado Remoulade

Most remoulades are heavy on the mayonnaise, which could blackball your baked fish dish from the "healthy eats club." That's where SlimCado avocadoes come in. They add a creamy, rich taste to this remoulade that makes mayonnaise totally unnecessary.

Ingredients
1 SlimCado avocado
1/4 cup Greek yogurt
2 tbs Dijon mustard
2 limes
1 package Concord guacamole mix

Directions

  1. In a food processor or blender, combine the SlimCado, yogurt, mustard and the juice of one lime. When combined, add the contents of a package of Concord guacamole mix.
  2. Scoop contents into a small bowl and cover the top of the sauce with plastic wrap. Refrigerate 15 minutes before starting the fish.
  3. To serve, spoon remoulade over ready-to-serve fish. Add slices of lime for individual squeezing.

Serves: 4
Prep time: 45 minutes (approximately 20 minutes cooking time)

Mango SlimCado Cobb Salad

Sure, you could simply chop up these two tropical favorites and serve them. But with a little help from the seasonings in Concord guacamole mix, you've got a great side dish for summer's outdoor eating.

Ingredients
1 SlimCado avocado, cubed
3 slices of bacon, cooked and crumbled
1 mango, cubed
1/4 cup sliced almonds
1 package Concord guacamole mix
1/4 cup canola oil
1 lime
1/4 cup red wine vinegar

Directions

  1. Toss bacon, mango, avocado and almonds gently in a large bowl.
  2. In a small bowl or cruet, whisk or shake together the dressing ingredients. Pour the dressing over the fruit, bacon, avocados and almonds. Toss gently. Refrigerate for at least 30 minutes.
  3. Just before serving, toss gently.

SlimCado Marinated Mushroom Salad

SlimCados and mushrooms combine for a deep, musky taste that pairs nicely with the smoky taste of meats coming off the grill. The seasonings in Concord guacamole mix simply take it up a notch.

Ingredients
1 SlimCado avocado, seeded and cubed
1 cup small button mushrooms, sliced
2 tbs red onion, chopped
1 package of Concord guacamole mix
3 tbs olive oil
1 tbs red wine vinegar

Directions

  1. In a medium-sized bowl, gently toss the SlimCado avocado, mushrooms and red onion.
  2. In a small bowl or cruet, mix the Concord guacamole mix, olive oil and vinegar.
  3. Pour the Concord guacamole mixture over the SlimCado, mushrooms and red onion. Toss gently. Cover with plastic wrap touching the salad's top. Refrigerate at least 30 minutes.
  4. Just before serving, gently toss the salad once again.

Mayonnaise causes too many worries. You worry if it's been out of the refrigerator too long. You worry that you should be eating something healthier. Why worry, when SlimCados can provide the yummy culinary cohesion for this outdoor eating favorite?

Ingredients
1 SlimCado avocado, seeded and cubed
8 whole hard-boiled eggs, peeled
1 package Concord guacamole mix
1/4 cup Greek yogurt
3 tsp red wine vinegar
1 tsp chives (optional)

Directions

  1. Combine the avocado, eggs, Concord guacamole mix, yogurt and vinegar in a food processor and pulse a few times until you achieve the desired consistency. You may have to scrape the sides of the bowl once or twice.
