Starfruit cranberry sauce

To me, cranberries are a comfort food perfect during the winter (even a tropical winter). And starfruit just makes the dish star-studded.


1 inch fresh ginger
1 1/4 cup orange juice
1 cup sugar
2 Florida starfruit
1 pkg. cranberries (12 oz.), rinsed with any bad ones thrown out

Prep time: 10 minutes, plus 12 minutes of cooking

1. Peel the ginger. Grate into very small or minced pieces.
2. In a large saucepan over medium-high heat, stir together the ginger, orange juice and sugar. Stir occasionally while bringing to a boil and then reduce to a simmer.
3. Meanwhile, cut off the ends of the starfruit and trim the ribs with a veggie peeler. Cut into 1/2-inch star slices.
4. Add the starfruit and cranberries to the saucepan. Simmer. Stir occasionally until all the cranberries pop, about 8 minutes. Set aside to cool.
5. Serve chilled or at room temperature.
