STAR-DUSTED GREEN BEANS

Star-dusted green beans

Thank goodness for steamable veggies; that gives us some time to dress them up. And topping green beans with a light starfruit sauce makes a perfect side dish that even kids will find hard to turn away.

INGREDIENTS:

12-oz. bag of ready-to-steam green beans
2 large starfruit
4 tbs olive oil
1/2 red onion, diced
1 tsp dried mustard
1 tsp marjoram
4 tbs balsamic vinegar

Yield: 4 servings
Prep time: 10 minutes, plus 15 minutes of cooking

How to cut starfruit

DIRECTIONS:

1. Follow directions on the bag to steam the green beans.
2. Cut off the ends of the starfruit and trim the ribs with a veggie peeler. Cut into 1/2-inch star slices.
3. In a large skillet over medium-high heat, heat the oil. Add the onions and cook 3 to 4 minutes. Add the mustard, marjoram and vinegar. Stir to combine. Add the starfruit slices and stir to cover the slices with the onion mixture. Cook 3 to 4 minutes. Add the green beans and toss to cover.
4. Serve warm.
