STARFRUIT APPETIZERS

Appetizers with star appeal. Toss the crackers and top slices of starfruit with tastes that can varying from sweet to savory.

DESSERTING WITH STARFRUIT BITES

Desserting with starfruit bites

This recipe is perfect for when you've got fruit targeted for a salad but can reserve some slices for these starfruit bites that can be an appetizer or dessert.

INGREDIENTS:

3 medium Florida starfruit
1 tbs sugar
2 oz cream cheese
2 oz whipped dessert topping
1/10 Caribbean Red® papaya, chopped
1/4 cup blackberries
1/4 cup blueberries

Yield: 12 servings
Prep time: 10 minutes

DIRECTIONS:

1. Slice the ends off of the starfruit. Discard. Slice the starfruit into 1/4" slices. Discard any seeds.
2. Peel and cut open a Caribbean Red papaya. Discard the peel and seeds. Chop enough for 2 cups of bit-sized pieces. Reserve the remaining papaya for another dish.
3. Over medium-high heat in a large saucepan, add the orange juice and brown sugar stir to dissolve. Bring to a boil. Add the starfruit slices and papaya chunks. Return to a boil then reduce heat and simmer 10 minutes. Remove from heat.
4. In a small bowl, add the contents of the powdered coconut milk package. Add 1/2 the recommended water. Whisk to combine.
5. Divide starfruit and papaya between 4 bowls. Drizzle the coconut milk over the top. Serve immediately.

Enjoying an Indian curry tonight? Take a minute or two to make this appetizer that perfectly kicks of the meal.

INGREDIENTS:

3 medium Florida starfruit
1/4 cup mango chutney
1/3 cup fresh basil

Yield: 12 servings
Prep time: 5 minutes

How to cut starfruit

DIRECTIONS:

1. Slice the ends off of the starfruit. Discard. Slice the starfruit into 1/2" slices (or 4 slices per fruit). Discard any seeds. Arrange starfruit slices on a serving platter.
2. Top each starfruit slice with a dab of chutney and a leaf of basil.

STARFRUIT GOES ITALIAN

Starfruit goes Italian

Pimentos, olives and cream cheese make a perfect topping for crackers. Even lighter and brighter when topping starfruit slices. This combo is perfect when the main dish is fish.

INGREDIENTS:

3 medium Florida starfruit
1/3 cup cream cheese
2 tbs olives with pimentos, chopped

Yield: 12 servings
Prep time: 5 minutes, plus 1 hour refrigeration

DIRECTIONS:

1. Slice the ends off of the starfruit. Discard. Slice the starfruit into 1/2" slices (or 4 slices per fruit). Discard any seeds. Arrange starfruit slices on a serving platter.
2. In a small bowl, combine the cream cheese and olives.
3. Top each starfruit slice with a tiny scoop of the cream cheese mixture.
4. Refrigerate for at least 1 hour.

CHIMICHURRIED STARS

INGREDIENTS:

3 medium Florida starfruit
1/4 cup vanilla Greek yogurt (leave more of the watery part behind in the container)
1/8 cup chimichurri sauce

Yield: 12 servings
Prep time: 5 minutes
