Starfruit shrimp stir-fry

Stir-fry is quick and easy. This one is no exception. Serve on top of rice or over veggies for a great entrée.


2 Florida starfruit, each larger than the palm of your hand
1 lb. ready-to-eat shrimp
1 tsp cornstarch
1 tbs rice vinegar
1/4 cup orange juice
1 tbs low-sodium soy sauce
2 tbs canola oil
1 tsp fresh ginger, peeled and minced (about 1/2" of a ginger "finger")
1 tsp garlic, minced

Yield: 4 servings

1. Slice the starfruit into 1/4" slices or stars. Discard the seeds.
2. Rinse off the shrimp. Drain.
3. In a small bowl, combine the cornstarch and rice vinegar. Then add the orange juice and soy sauce.
4. In a large skillet or wok, heat the oil over medium-high heat for 3 minutes. Add the ginger and garlic; stir for 1 minute.
5. Add the shrimp and starfruit slices. Toss to coat. Cook for a minute, stirring continuously.
6. Add the sauce and stir to combine. Cook about 2 minutes, or until the sauce thickens a bit. Remove from heat.
7. Serve immediately over rice.
