Starfruit Upside Down Cake

This classic dessert gets a face-lift by using starfruit in place of the traditional pineapple. An ideal dessert for a crowd, it stays moist and luscious for a few days when carefully covered.

Ingredients:

1 box yellow cake mix
1/4 cup tropical fruit juice to replace any water called for in the recipe
2 tbs light brown sugar
2 cups starfruit, sliced into star shapes
1/4 cup dried cherries
3 tbs candied ginger, finely diced

Directions:

Grease bottom of 13"x9" pan and evenly sprinkle with sugar.
Lay starfruit in pan bottom without overlapping. Sprinkle cherries and ginger across fruit.
Prepare cake mix according to box directions (using a tropical fruit juice in place of water called for in the recipe).
Pour batter into pan; bake according to box directions.
Let cake cool in pan 20-30 minutes.
When cool, invert onto flat tray.

Makes: Approx. 18 servings.
