SOLO MANGO TANGO
Papaya, with its high level of vitamin C and heart healthy potassium, is the star of this fruit salad. And it brings it's own bowl to the table.
2 Solo papayas
2 mangos, peeled and diced into 1-inch chunks
1 honeydew melon, peeled, seeded, diced into 1 inch chunks
1 tbsp sugar
1 tbsp Grand Marnier
7 oz each greek yogurt
1/4 cup fresh squeezed orange juice
1/4 tsp vanilla extract
1 tbsp honey
Mint sprig for garnish
Yield: 4 servings
Prep time: 30 minutes (doesn't include time for chilling)
1. Cut the solo papayas in half vertically. Scoop out the flesh and cut into 1" chunks.
