Groovy Coconut solo salsa

A sweet salsa starring Solo papaya and Groovy Coconut, this salsa delivers a WOW factor when topping grilled steak or chicken.


1 Solo papaya
1 tbs chopped basil
1/4 Groovy Coconut

Yield: 2 cups

1. Cut the Solo papaya in half lengthwise and scoop out the seeds. Scoop out the bright orange flesh and chop the papaya finely.
2. Open a Groovy coconut. Extract the white coconut meat. Dice a fourth of the coconut meat. Wrap the coconut up in cling wrap to store the rest of the coconut in the refrigerator for up to 6 weeks or in the freezer for up to 3 months.
3. In a medium bowl, combine all ingredients.
4. Refrigerate covered for up to 2 days.
