EGGS SOLO

Eggs solo

Yippee, we're allowing to eat eggs again, oh but the messy skillet aftermath. For a no mess egg, cooked however you want it, crack an egg into half of a solo papaya and bake. Bake to your heart's content 15 minutes - over easy and more time (5 minute increments) for medium and hard.

INGREDIENTS:

1 Solo papaya, cut in half with seeds discarded
Non-fat cooking spray
2 large eggs
Salt and pepper to taste
Optional 1 tsp shredded cheese

Yield: 2 servings
Prep time: 5 minutes, plus 15+ minutes baking.

How to chop Solo papaya

DIRECTIONS:

1. Preheat oven to 350°.
2. Spray a rimmed cookie sheet with cooking spray.
3. Place the Solo papaya halves on the sheet, flesh side up.
4. Crack an egg into each half.
5. Sprinkle with salt and pepper. Optionally sprinkle with shredded cheese.
6. Bake for the amount of time required for your eggs.
7. Serve warm.
