PAPAYA SOUP

Papaya soup

Sometimes the simple recipes are the best. Enjoy chilled or warm.

INGREDIENTS:

2 Solo papayas (without seeds) cut in half, flesh scooped out, skins put aside
2 Florida starfruit (without seeds), cut into slices (save 4 slices for topping)
1/2 cup coconut cream
2 limes
2 tbs honey
1 tsp fresh cilantro, chopped

Yield: 4 servings

DIRECTIONS:

1. Coarsely chop the Solo papaya flesh.
2. Place the papaya flesh, starfruit and coconut cream in a blender or food processor. Process until smooth.
3. In a large saucepan over medium-high heat, place the papaya mixture and the juice of 1 lime. Bring to a boil, reduce heat and simmer for 10 minutes, stirring occasionally.
4. Divide soup into the 4 Solo papaya skins. Drizzle with honey and serve with lime wedges.
