O Solo Minty Salad

You can add almost any salad ingredient with Solo papaya and have a hit on your hands. Serve in the papaya shells and its visual appeal will insure no leftovers.


2 Solo papayas
1 tbs sugar
1/4 cup rice vinegar
1 lime
1/2 cup chopped onion
1/4 cup chopped mint

Yield: 4 servings
Prep time: 15 minutes

1. In a small bowl, combine the sugar, vinegar and the juice of the lime.
2. Slice the solo papayas in half lengthwise. Scoop out the seeds then scoop out the flesh. Put aside the shells and chop the flesh into small cubes.
2. In a large bowl, combine the papaya cubes, onion and mint.
3. Just before serving, pour dressing over the salad and toss gently. Scoop into papaya shells and garnish with mint.
