Radiant Radishes Guacamole

SlimCados® are team players. This avocado welcomes a lot of other fruits and vegetables into great-tasting guacamoles. In this dip, radishes, plum tomatoes and Parmesan cheese join the team.


1 SlimCado avocado
1 pkg Concord Foods Guacamole Mix - Spicy
1/4 cup dehydrated parsley, chopped
1/4 cup Parmesan cheese, grated
1 lime
6 radishes, chopped into small pieces
2 plum tomatoes, chopped into small pieces

Yield: 4 cups
Prep time: 15 minutes (excludes refrigeration time)


1. Cut the SlimCado avocado in half, discard the seed and scoop out the meat into a large bowl. Mash to your desired guacamole texture.
2. Add the Concord Foods Guacamole Mix, parsley, cheese and radishes. Mix thoroughly. Smooth out the surface of the guacamole and place plastic wrap over it. Refrigerate at least 30 minutes.
3. Options:
a. If serving guacamole at a later time, place the chopped tomatoes on the plastic wrap on top of the guacamole. Add another layer of plastic wrap and keep refrigerated.
b. If serving guacamole immediately, add the tomatoes after chilling the guacamole for 30 minutes. Mix and serve.
