SLIMCADO® AND TOMATO SALAD WITH LIME VINAIGRETTE

SlimCado and Tomato Salad with Lime Vinaigrette

INGREDIENTS:

1 SlimCado avocado, peeled and pitted
2 ripe tomatoes
3 chopped scallions (green onions)
Lime vinaigrette*

Yield: 4 servings

How to chop up a SlimCado

DIRECTIONS:

1. Slice SlimCado and quarter tomatoes.
2. Arrange on serving dish with chopped scallions.
3. Top with lime vinaigrette.

Lime Vinaigrette*

1 clove garlic, crushed
1/2 tsp salt
1/2 tsp Dijon-style mustard
3 tbs fresh lime juice
1 1/2 tbs Grand Marnier or other orange liquer
3/4 cup olive oil

Yield: 1 cup

How to juice a lime

DIRECTIONS:

1. Using a fork, mash garlic and salt to a paste in a small bowl.
2. Stir in mustard, lime juice, and Grand Marnier.
3. Gradually whisk in olive oil until mixture is smooth and thick.
4. Adjust the flavor by adding more lime juice or olive oil as needed.
