SlimCado stuffed mushrooms

Nothing says "the party's on" like stuffed mushrooms. SlimCado avocados make them bite-sized bits of savory. This SlimCado appetizer can make a festive dinner prep with the kids mashing and stuffing (with an outcome that may motivate eating these nutritious treats).


1 dozen large mushrooms
1 SlimCado avocado
1/4 cup bacon bits
1/4 cup horseradish sauce
2 tbs red onion, chopped
1 tsp minced garlic
1/4 cup cheese (sharp for adults, cheddar for the family fun)

Yield: 12 mushroom caps
Prep time: 10 minutes, plus 20 minutes of baking time

How to chop up a SlimCado


1. Preheat oven to 400° F. Coat an 9 x 13 baking dish with cooking spray.
2. Rinse off and lightly scrub the mushrooms with a vegetable brush to get any dirt off. Take the stem off and remove any membrane covering each of the mushroom's dark brown "comb." Chop up the stems.
3. Cut the SlimCado in half, discard the seed, and scoop out the flesh into a large bowl. Mash with a potato masher.
4. Add mushroom stems, bacon bits, horseradish sauce, onion, and garlic to the mashed SlimCado. Combine.
5. Fill each mushroom cap with the SlimCado filling. Sprinkle with parmesan cheese.
6. Bake 20 minutes.
