SALAD PIZZA

Salad Pizza

Pizza flip-flops on the color wheel from red to green. Not what the Italians had in mind. But if they and your family are up for great taste, this will pass the pizza test. Add bite-sized chunks of chicken to make this the main dish.

INGREDIENTS:

1 flatbread pizza round, size and shape as desired
1 cup water
2 cups chopped broccoli florets
6 oz baby arugula or spinach
1 package pre-cooked Chicken breast (for optional entree)
1 SlimCado® avocado, mashed
1/2 cup prepared basil pesto
1 tsp pepper
1 cup mozzarella cheese, shredded

Yield: 4 as a side dish, 2 as an entrée.
Prep time: 30 minutes

How to chop up a SlimCado

DIRECTIONS:

1. Follow directions on flatbread package to pre-heat flatbread on cookie sheets.
2. Meanwhile, in a large saucepan, heat water over medium-high heat. Add broccoli, cover and cook for 3 minutes. Add arugula or spinach, cover and cook for an additional 2 minutes. Drain.
3. While the broccoli is cooking, combine SlimCado avocado, pesto and pepper in a medium bowl.
4. Spread SlimCado mixture evenly over flatbread. Top with broccoli and arugula.
5. Sprinkle shredded cheese on top.
6. Bake as directed on flatbread package.
7. Serve hot.
