BEEF SLIMCADANOFF

Beef SlimCadanoff

Beef Stroganoff needed updating. It wasn't a good-looking dish to begin with. SlimCado® matches the original's great taste yet adds a subtle creaminess that the original recipe's dependence on sour cream required.

INGREDIENTS:

12 oz multicolored pasta or egg noodles
Nonfat cooking spray
1 small onion
1 lb lean ground beef
2 SlimCado avocados, mashed
2 cups chopped gourmet mushrooms
1/4 cup white wine
1/4 cup beef broth
1/4 cup Greek yogurt
1 tbs ground pepper

Yield: 4 servings
Prep time: 30 minutes

How to chop up a SlimCado

DIRECTIONS:

1. Bring a large pot of water to a boil. Add pasta and cook until tender, approximately 10 minutes.
2. Meanwhile, spray a large nonstick skillet with cooking spray. Over medium heat, cook the onion until slightly brown. Add ground beef and cook while stirring for about 5 minutes. Add SlimCado, mushrooms, wine and broth. Turn down to simmer for 10 minutes.
3. Remove from heat. Stir in Greek yogurt and pepper.
4. Serve immediately, topping noodles with SlimCado sauce.
