Slim Chili

With grocery stores having containers of chopped onion and green peppers ready-to-go, Guacamole chili is a hearty quick on the draw. SlimCado® avocado lightens chili's usually dominant tomato taste. Serve with a SlimCado guacamole on the side, and don't be surprised if your diners add both on each spoonful.


2 tbs canola oil
1 cup onion, chopped
1 lime
2 cups green pepper, chopped
1 SlimCado avocado, pitted
1 16 oz. can diced tomatoes (optional: two medium tomatoes, diced)
1 16 oz. can black beans, rinsed and drained
1 11 oz. can corn, drained
2 tbs chili pepper
1 tbs oregano
2 tsp. cumin

Yield: 4 servings

How to chop up a SlimCado   How to juice a lime


1. In a dutch oven, heat canola oil on medium-high heat. Saute onion for 5 minutes.
2. Add green pepper and the juice of one lime, heat for 5 minutes.
3. Scoop out SlimCado and either mash or chop into cubes, your choice. Reserve 3 tbs to serve on top.
4. Lower heat to medium. Add SlimCado and remaining ingredients to the dutch oven. Heat stirring occasionally approximately 15 minutes.
5. Serve immediately with a dollop of sour cream and SlimCado.

* Use fresh tomatoes instead of canned and SlimCado's lite avocado taste will rule the dish.
