With grocery stores having containers of chopped onion and green peppers ready-to-go, Guacamole chili is a hearty quick on the draw. SlimCado® avocado lightens chili's usually dominant tomato taste. 2 tbs canola oil
1 cup onion, chopped
2 cups green pepper, chopped
1 SlimCado avocado, pitted
1 16 oz. can diced tomatoes (optional: two medium tomatoes, diced)
1 16 oz. can black beans, rinsed and drained
1 11 oz. can corn, drained
2 tbs chili pepper
1 tbs oregano
2 tsp. cumin
Yield: 4 servings
Prep time: 30 minutes
1. In a dutch oven, heat canola oil on medium-high heat. Saute onion for 5 minutes.
* Use fresh tomatoes instead of canned and SlimCado's lite avocado taste will rule the dish.
