Remember slicing a big wedge off a head of iceberg lettuce and spooning over it—no covering it with—Thousand Island dressing? Ah, the days of thinking that was a healthy side dish. This is a dressing that gives Thousand Island a run for its money. SlimCado avocado makes it so much more sensible, yet the fruit doesn't shy away from great taste.
Ingredients:
1/2 cup ripe SlimCado® avocado, cubed
1/4 cup fresh basil OR cilantro OR thyme OR herb mixture
2 tbs olive oil
1 tbs apple cider vinegar
1 tbs fresh lime or orange juice
1 tsp honey or
agave nectar
1/4 tsp salt
1 small garlic clove, finely chopped
Up to 1/2 cup water
Freshly grated black pepper
Directions:
1. In a blender or food processor, combine all ingredients except water and pepper, and process on high speed while adding water until you reach the desired consistency. Add pepper to taste.
2. Spoon onto salad just before serving.
