Peanut Buttered Guacamole Starring SlimCado

If the SlimCado is soft, this can be made in individual servings by mixing or really squishing the avocado with the peanut butter within a sandwich bag, which can be packed for lunch. Not a lot of clean-up with this guacamole.


1 SlimCado avocado, chopped in large pieces
1 lime, juiced
1/2 tsp cumin
1/2 cup smooth peanut butter*
salt and pepper to taste

Yield: 4 servings
Prep time: 10 minutes, excluding optional pasta's cook time.

1. Purée the SlimCado in a food processor.
2. Add the lime juice and cumin, then the peanut butter. Blend until mixed.
3. Spoon mixture into 4 closeable plastic sandwich bags. Squeeze out air and refrigerate until ready to serve.
4. Pack for lunch with packets of salt and pepper. No need to remove the guacamole from the sandwich bag. Dip raw veggies into the bag for a great easy clean-up lunch.

* Prefer chunky? Just mash the SlimCado before adding the chunky-styled peanut butter. Prefer low-fat peanut butter? It's best done in the sandwich bag.
