No-bake SlimCado lime cheesecake

True, it uses a no-bake cheesecake kit found in any grocery store. But it's still no bake with the substitution of a SlimCado and a couple of limes for the milk. I'm happy to report that lack of effort has not computed to a lack of enthusiasm for this dessert. Keep an extra kit on hand for quick dessert moments.


nonfat cooking spray
1 no-bake cheesecake kit (found in the cake mix aisle in your grocery store)
5 tbs butter, melted
1/4 cup sugar (as directed on the cheesecake package)
1 SlimCado avocado, cut in half, seed discarded, peeled
2 limes

Yield: 6 servings
Prep time: 15 minutes

How to chop up a SlimCado   How to juice a lime


1. Spray a pie dish with cooking spray.
2. Prepare crust as directed on the package, using half the sugar.
3. In a food processor, add chunks of the SlimCado, the juice of 2 limes, the remaining sugar and the contents of the cheesecake filling mix. Pulse until blended.
4. Scoop into the pie crust. Refrigerate to serve chilled.
