UNENCUMBERED CUCUMBER FAJITAS

Unencumbered cucumber fajitas

Quick to make with precooked beef tips readily available in your grocer's prepared meats aisle. SlimCado® and cucumbers nicely complement the beef.

INGREDIENTS:

8 whole-wheat tortillas
15 oz.-pkg. precooked beef tips with seasoned gravy
1 clove garlic, minced
1/2 cup cilantro, chopped
1 SlimCado avocado, cut in half, seed discarded, peeled
1 large cucumber, peeled, cut into 1/2" slices, then cut into quarters
1 lime
1/4 cup American cheese

Yield: 8 fajitas

DIRECTIONS:

1. Preheat the oven to 350° F.
2. Place the tortillas in a 9"x13" baking dish and put in the oven. Let heat as you're preparing the rest of the recipe.
3. Microwave the beef tips as directed on the package.
4. Add the beef tips and gravy to a large bowl. Add the garlic, cilantro, avocado, cucumber and the juice of one lime. Toss gently to combine.
5. Allow your diners to make their own fajitas. Serve warm with cheese on the side.
