2-WAY SLIMCADO® SHRIMP SALAD

SlimCado shrimp salad

If you scoop the salad into a SlimCado half, lunchtime can't come soon enough. And don't worry about taking the time to crack open a coconut. You'll have plenty of fresh coconut for future dishes because it freezes nicely.

INGREDIENTS:

1 SlimCado avocado (add another, if using as a bowl)
2 tbs Groovy CoconutTM, shredded
1 tsp olive oil
1 lime
1/8 cup red onion, chopped
dash of salt and pepper
1/4 cup cucumber, peeled and diced
1/2 lb. shrimp, cooked and peeled
1/2 cup fresh tomato, diced
2 tbs cilantro, chopped

Yield: 2 servings
Prep time: 30 minutes, plus 2 hours of refrigeration

DIRECTIONS:

1. Slice a SlimCado in half. Discard the seed. Scoop out the flesh and mash in a large bowl.
2. Extract the white coconut from its shell. Shred.
3. Add the remaining ingredients to the bowl and combine.
4. Cover and refrigerate for at least 2 hours.
5. Toss gently before serving on top of lettuce, or slice another SlimCado in half, use it as a bowl and scoop the salad into it.
