2-WAY SLIMCADO® SHRIMP SALAD
If you scoop the salad into a SlimCado half, lunchtime can't come soon enough. And don't worry about taking the time to crack open a coconut. You'll have plenty of fresh coconut for future dishes because it freezes nicely.
1 SlimCado avocado (add another, if using as a bowl)
2 tbs Groovy CoconutTM, shredded
1 tsp olive oil
1/8 cup red onion, chopped
dash of salt and pepper
1/4 cup cucumber, peeled and diced
1/2 lb. shrimp, cooked and peeled
1/2 cup fresh tomato, diced
2 tbs cilantro, chopped
Yield: 2 servings
Prep time: 30 minutes, plus 2 hours of refrigeration
1. Slice a SlimCado in half. Discard the seed. Scoop out the flesh and mash in a large bowl.
