MARINATED TOFU TOPPED WITH CARIBBEAN SALSA
If your family goes AWOL at the sight of tofu, marinate the tofu and top it with this salsa that has a Caribbean vibe.
1/8 cup fresh cilantro or parsley, chopped
1 jalapeno chili, chopped
1 tsp salt
1 tsp pepper
2 tbs extra virgin olive oil

1 cup broccoli, cut into small florets
nonstick cooking spray
1/4 cup low-sodium soy sauce
1" fresh ginger, minced
2 limes (1 for the recipe, the other for garnish)
1 14 oz. pkg extra-firm tofu, drained and sliced into cubes or 8 rectangular pieces from the sides of the tofu
1 tsp curry powder
Yield: 4 servings
Prep time: 30 minutes plus 20 minutes of marinating and 40 minutes of baking (the salsa can be chilling in the refrigerator while the tofu steaks are marinating and baking).
