Caribbean Red snack treats

Take a baked fruit bar recipe and add papaya instead of apple or berries. Caribbean Red papaya will make your treat naturally sweet and refreshing. Here's a simple fruit bar recipe to try. Or replace a fruit in one of your favorite fruit dessert recipes with papaya.


1 1/2 cups all-purpose flour
1 cup light brown sugar (packed)
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups rolled oats
1 stick of butter, at room temperature
1/2 Caribbean Red papaya, peeled, seeds removed and chopped
1/4 cup Groovy CoconutTM, shredded

Yield: 8 servings
Prep time: 10 minutes, plus 40 minutes baking time

1. Preheat the oven to 350°.
2. Spray a 9"x13" pan with nonfat cooking spray.
3. In a large bowl, stir together the flour, brown sugar, baking soda, salt and rolled oats.
4. Add the butter. With a potato masher, cut it into the flour mixture until crumbly.
5. Press about 3/4 of the mixture into the prepared pan. Spread the chopped guava over the crumble mixture. Sprinkle the remaining mixture over the guava pieces.
6. Bake for 35-40 minutes, or until crust is lightly browned. Add shredded coconut to the top for the last 10 minutes of baking.
7. Allow to cool. Cut into slices.
