CARIBBEAN RED® PAPAYA RELISH

Caribbean Red papaya relish

It's a versatile relish that tops meat one night and veggies the next. Spread as a relish on a sandwich for a special luncheon treat.

INGREDIENTS:

2 limes
1 tsp garlic, minced
1/2 tsp kosher salt
1 tbs rice-wine vinegar
1 tbs sugar
1 tsp hot sauce
1/4 cup red onion, finely chopped
2 tbs fresh cilantro, finely chopped
1/4 Caribbean Red papaya, chopped into 1/2" pieces

Yield: 2 servings

DIRECTIONS:

1. In a large bowl, add the garlic, salt, vinegar, sugar and hot sauce, as well as the juice of the 2 limes. Stir to combine.
2. Add the onion and cilantro to the bowl. Stir to combine.
3. Add the papaya to the bowl, toss to coat. Refrigerate for at least 2 hours.
4. Toss just before serving.
