Caribbean Red papaya meat marinade

Caribbean Red® papaya has a digestive enzyme called papain. Papain can help your digestive system and can also help tenderize meat.


1/4 Caribbean Red papaya, pureed
1/8 cup olive oil
3 tbs soy sauce
2 limes
1/2 tsp salt
A dash of garlic powder
A dash of onion powder
1 tsp papaya seeds, chopped

Yield: 4 meat servings as marinade
Prep time: 15 minutes, plus 2 hours of marination

1. Over medium heat in a medium saucepan, bring the Caribbean Red papaya puree to a slow boil. Add the remaining ingredients. Stir to combine.
2. Pour the marinade into a flat container large enough to hold meat in a single layer.
3. Place meat in the marinade and turn it to coat both sides.
4. Cover. Allow meat to sit at room temperature for 2 hours. After that, refrigerate up to 3 days Turn meat occasionally.
5. Cook meat as desired, brushing with marinade as you would a BBQ sauce. Serve any additional marinade on the side.
