Papaya-Fig Nut Truffles

Those gold-wrapped chocolate balls deliver a brief chocolate fix. Popping several into your mouth in rapid succession will satiate your chocolate cravings. Why not try a chocolate treat that can be slowly savored, such as a truffle that combines figs, chocolate and papaya. Common sense says it won't work, but this nonsensical treat will deliver.

Ingredients:

2 oz dark chocolate (60-70% cacao content), finely chopped
2 tbs boiling water
1/3 cup almonds, unsalted (or pecans or cashews)
1 cup dried figs, diced
2 tsp orange zest
1/8 tsp salt
1/2 cup dried papaya, finely chopped
1/2 cup coconut, unsweetened

Directions:

1. Combine chocolate and boiling water in a small bowl, stirring until melted.
2. In a food processor, grind the almonds, then add the figs, orange zest, salt and chocolate mixture, creating a thick consistency. Transfer to a bowl and stir in dried papaya. Refrigerate for several hours.
3. Spread coconut on a plate. Roll fruit-nut-chocolate mixture into small balls, then roll in coconut. Chill again before serving. Store in airtight container.

Makes: 18-24.
