Ingredients:
4 cups baked sweet potato (skin removed)
2 cups ripe Caribbean Red papaya, chunked
1 tbs chipotle peppers in adobo sauce, canned, finely diced
salt and pepper to taste
1 tbs chopped pecans
Directions:
1. Mash together sweet potatoes, papayas and peppers in a food processor or blender. Add salt and pepper to taste.
2. Scoop into an ovenproof baking dish. Top with pecans. Bake in 350 F oven for 20-30 minutes until heated thoroughly.
Prep time: 45 minutes (doesn't include time to initially bake the sweet potatoes)
