Is relish is in a pickle because it doesn't have a pickle? Time to redefine relish. Think of it, Reagan made ketchup count as a vegetable. Let's do it to another condiment but this time really make it count on the nutritional scale. Bring on the Caribbean Red papayas.
Ingredients:
1/4 cup Caribbean Red papaya
1/4 cup yellow onion
1/4 cup red or green bell pepper
1/4 cup yellow squash
1/4 cup fresh cilantro
1 tablespoon fresh ginger
2 tablespoons olive oil
2 tablespoons lime juice
1 teaspoon pepper
Directions:
Finely chop papaya, onion, bell pepper, squash and cilantro.
Combine ingredients with olive oil, lime juice and pepper.
Cover and refrigerate 2 hours before serving.
