Hummus made in the Caribbean has to have some papaya in it. It's a matter of East meets the West Indies. And yes, I'm cheating by adding the Italian dressing seasoning packet instead of the herbs and spices.
1/4 Caribbean Red papaya (about 1 cup chopped)
1" fresh ginger
1 15 oz. can chickpeas, drained
1 clove garlic
1 tbs tahini
1.6 oz. pkt dried Italian dressing seasoning
1/4 cup fresh cilantro, chopped
Crackers to serve
Yield: 2 cups
Prep time: 15 minutes

1. Peel the Caribbean Red papaya. Discard the seeds. Cut half into large pieces. Add to a food processor.
