FALL TROPICAL FRUIT CAKE

Fall Tropical Fruit Cake

Fresh fruit makes for a moist cake. Fresh coconut adds, there's no other word to describe it, a fresh light taste to a cake. Papaya melds nicely with strawberries with starfruit adding the shine on the top. Who needs icing or a lot of sugar in a cake when baked with tropicals inside?

INGREDIENTS:

Non-fat cooking spray
1/4 Caribbean Red papaya
1/8 Groovy coconut (about 1/2 cup shredded)
1 cup strawberries, trimmed and sliced
1/2 cup almonds, sliced
1 tbs sugar
1 tbs cinnamon
5 tbs butter, softened
1 cup sugar
1/3 cup low-fat buttermilk
2 large eggs
2 large egg whites
2 cups cake flour
2 tsp baking powder
1 starfruit

Prep time: 20 minutes, plus 40 minutes of baking and 20 minutes of cooling

DIRECTIONS:

1. Preheat the oven to 350°F. Spray a 9x12-inch baking dish with cooking spray.
2. Peel the papaya. Cut in half and discard the seeds. Chop into small pieces. Use about 1 cup for this recipe. Reserve the other pieces for another dish.
3. Add about 1/2 cup of the papaya pieces to a large bowl, put aside the other 1/2 cup for now.
4. Open the coconut. Extract the white flesh and add to a food processor. Pulse until shredded. Add 1/2 cup of the shredded coconut to the large bowl, put aside 2 tbs for a garnish.
5. In a medium bowl, use an electric mixer to beat the butter until creamy. Gradually add the sugar and buttermilk. Add the the eggs and egg whites. Then add the flour and baking powder. Pour into the fruit bowl and toss gently to combine.
6. Pour the batter into the baking pan. Bake for 30 minutes.
7. Add the remaining papaya, strawberries and almonds to a medium-sized bowl. Add 1 tbs of the sugar and cinnamon. Toss gently to coat.
8. Top the almost baked cake with the papaya, strawberries and almonds.
9. Cut the starfruit into star-shaped slices. Poke out the seeds. Top the cake with the slices and the 2 tbs of shredded coconut. Bake for another 10 minutes or until a cake tester can be inserted and removed cleanly.
10. Let cool for 20 minutes. Then invert the cake onto a plate. Invert the cake again onto a large plate or platter and let cool completely.
