PAPAYA SALSA ORIENTAL RECIPE

Papaya Salsa Oriental

East meets south of the border with this quick recipe. Perfect for crisp toast scooping bruschetta style.

INGREDIENTS:

1 cup Caribbean Red® papaya
2 tablespoons minced ginger (or chopped, if desired)
1/4 cup white onion
1/2 cup kumquats (use skin and flesh)*
1/4 cup fresh mint chopped
1 tablespoon lime juice
1 tablespoon soy sauce


* You can substitute 1 orange peeled


Yield: 3 cups
Prep time: 30 minutes

DIRECTIONS:

1. Finely chop papaya, ginger (if desired), onion, kumquats and mint.
2. Combine ingredients, cover and refrigerate 2 hours before serving.
