CARIBBEAN GARLIC SHRIMP
Quick and easy, nice and breezy my Jamaican papaya grower likes to say. Combining two Caribbean favorites, papaya and shrimp, can put you in the tropics for dinner even theres no ocean in sight.
½ Caribbean Red papaya, about 2 cups
4 tbs butter
2 cloves garlic, minced
1 cup red onion, chopped
2 sprigs thyme
1 lb medium pre-cooked shrimp, shelled, deveined
3 cups packed lettuce, your choice
Optional: ¼ cup cocktail sauce
Prep time: 20 minutes
1. Peel the Caribbean Red papaya and cut in half, remove the seeds. Cut into small pieces.
