PAPAYA RING PANCAKE

Papaya ring pancake

When making pancakes for the crew, you want to be good and choose a healthy alternative. You can have your pancake and tilt toward the healthy alternative with a papaya ring pancake.

INGREDIENTS:

non-fat cooking spray
1" round or ring Caribbean Red papaya
Pancake batter for 1 pancake
1 slice Florida starfruit

Yield: 1 serving
Prep time: 10 minutes

DIRECTIONS:

1. Slice a Caribbean Red papaya across its middle, making a 1/2"-thick round or ring. Cut off the peel and discard the seeds. Refrigerate the remaining papaya for a future dish.
2. Spray a skillet with cooking spray. Heat the skillet for 2 to 3 minutes over medium-high heat.
3. Pour the pancake batter into the skillet. Just before flipping, add the papaya ring to the pancake and the starfruit slice in the middle of the ring. Flip and cook until done. Serve immediately.
