Caribbean breakfast cookies

You've seen breakfast cookies on the grocery store shelf. They're less sweet than a regular cookie. Although less of the sugar crystals is always good, but it's not so good if the cookie tastes flat. Gain on the sweetness scale with a tropical fruit like the Caribbean Red papaya which adds an additional nutritional boost with its sweet flavor.


4 tbs unsalted butter
1 egg
1 passionfruit
1/2 cup Caribbean Red® papaya, puréed (about 1/4 the fruit)
1/2 cup sugar
1/2 cup light-brown sugar
1 1/4 cups flour
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp kosher salt
1 1/2 cups rolled oats
1 cup golden raisins

Yield: 24 cookies
Prep time: 20 minutes, plus 15 minutes of baking

1. Preheat oven to 350°.
2. Melt the butter in a microwave bowl for 45 seconds on high. Wear gloves to remove bowl.
3. In a large bowl, scramble the egg with an electric mixer on low. Add and mix together the seeded center of the passionfruit, papaya puree, sugar, brown sugar, baking soda, baking powder and salt.
4. Add the oats. Blend for thirty seconds, then turn up the speed of the mixer to completely blend the ingredients. Add the raisins while blending.
5. Using a 1 1/2-inch ice cream scoop, scoop up the dough and drop onto baking sheets lined with parchment paper, spacing 2 inches apart.
6. Bake 13 to 15 minutes or until just golden.
7. Remove from the oven and let cool on the sheets 5 minutes. Then transfer to a parchment paper covered wire rack. Cool completely.
