Berry Berry Papaya Salad

Lime is always a must squeeze for papaya but with a touch of honey this fruit salad almost turns into desert, plus the dressing stays on the fruit longer. If you've never tried finely chopped ginger in a recipe, give it a whirl. It's not so subtle burst of flavor is great for a change of taste.

Ingredients:

3 tablespoons lime juice
2 teaspoons honey
2 tablespoons minced ginger (or chopped, if desired)
1/2 cup blueberries
1/2 cup blackberries

Directions:

Chop the Caribbean Red papaya into 1/2" cubes. Combine the lime juice, honey and ginger in a small bowl. In a larger bowl, combine the remaining ingredients. Chill both. Just before serving, combine all ingredients by tossing lightly.

Serves six.
