BERRY BERRY PAPAYA SALAD WITH GINGER-LIME DRESSING

Berry Berry Papaya Salad

Lime is always a must squeeze for papaya but with a touch of honey this fruit salad almost turns into dessert, plus the dressing stays on the fruit longer. If you've never tried finely chopped ginger in a recipe, give it a whirl. It's not so subtle burst of flavor is great for a change of taste.

INGREDIENTS:

3 tablespoons lime juice
2 teaspoons honey
2 tablespoons minced ginger (or chopped, if desired)
1 Caribbean Red® papaya
1/2 cup blueberries
1/2 cup blackberries


Yield: 6 servings
Prep time: 30 minutes

DIRECTIONS:

1. Chop the Caribbean Red papaya into 1/2" cubes.
2. Combine the lime juice, honey and ginger in a small bowl.
3. In a larger bowl, combine the remaining ingredients.
4. Chill both.
5. Just before serving, combine all ingredients by tossing lightly.
