HOT MANGO SAUCE

Don't rub your eyes or touch your face when handling chile papers and wash your hands thoroughly when you are done.

INGREDIENTS:

1 Brooks mango
1 jalapeno pepper, seeds and ribs removed
1/2 cup chicken broth, either homemade or low-sodium canned
1/4 tsp Brooks ginger root, grated
1/2 tbs honey
Salt and freshly ground pepper to taste

How to prepare ginger

DIRECTIONS:

1. Cut the mango on both sides of the pit.
2. Reserve a few slices for decoration.
3. Scoop out all the rest of the flesh and purée in a blender or food processor fitted with the steel blade.
4. Add the jalapeno pepper, chicken broth, ginger root and honey. Blend until smooth.
5. Pour the mixture into a medium-size saucepan and heat on medium-low for about 8 minutes.
6. Season with salt and pepper and serve hot.
