Brooks Tropicals



1 frying chicken, cut in pieces
Vegetable oil for frying
2 onions, chopped (approx. 1 cup)
2 cloves garlic, chopped
1/2 cup mushrooms, chopped
1-1/4 cups uncooked rice
1/4 cup fresh lime juice
3/4 cup white wine or orange juice
1/2 cup packed light brown sugar
1/2 tsp ground curry powder
1/2 tsp ground cardamom
1/2 tsp ground black pepper
1 tbs garlic salt
1 cup mango pieces
1/4 cup golden raisins
1 8-oz. can (1 cup) pineapple chunks, undrained
1/2 cup water


1. Brown chicken pieces in vegetable oil in a large skillet.
2. Add onion, garlic, and mushrooms, and sauté until tender.
3. Pour rice in a 9x13 baking pan and top with browned chicken and onion mixture.
4. Combine remaining ingredients in the original skillet and bring almost to a boil.
5. Pour over chicken and rice mixture and baked covered for 325° F for 1 hour.
6. Continue baking uncovered for 15 more minutes or until chicken is tender.
7. Serve with freshly steamed vegetables and crusty french bread.
