Mediterranean meze lunch

In the Eastern Mediterranean, lunch is often a meze plate- a collection of small bites. Now mamey is not a Mediterranean fruit, but it certainly adds a sweet bite to this easily prepared lunch, perfect for the lunch box.


1/2 mamey sapote
1/4 cup hummus
1/8 cup feta cheese
1/8 cup black olives
2 fresh figs
2 whole wheat pitas, each cut into 4 triangles
10 pretzel crackers

Yield: 2 servings
Prep time: 5 minutes


1. Cut the mamey in half. Discard the seed. Scoop out half the meat.
2. Place all ingredients into separate sealable containers. Or you may find that everything fits in a sandwich-size sealable container. If so, scoop the mamey and hummus on the bottom of the sandwich container. Add the cheese and olives, keeping all ingredients separate. Cover with plastic on top and around sides of the ingredients. Top with pita triangles and pretzel crackers, and seal the container.
