LYCHEE CRAB SALAD

Lychees crab salad

INGREDIENTS:

1 package (6 oz) frozen crab meat, thawed
1/2 cup peeled and pitted lychees (approx. 10 fruits)
2 tbs chopped celery

Yield: 2 servings

DIRECTIONS:

1. On salad plates, arrange beds of lettuce.
2. Mix crab meat, lychees and celery in small mixing bowl and spoon carefully onto lettuce.
3. Garnish with Tropical Dressing.

Tropical Dressing

1/2 cup mayonnaise
2 tbs cream
2 tbs dry sherry
2 tbs chopped fresh basil
1 tsp fresh crushed black pepper
2 tbs minced green onion
1 tsp salt

How to cut lychee

DIRECTIONS:

1. Blend all ingredients until thoroughly mixed.
2. Drizzle over salad.
