CARIBBEAN RED® PAPAYA AND LYCHEE POPPY SEED SALAD

Caribbean Red papaya and lychee poppy seed salad

Papaya and lychees make a great tropical salad. It's light and lively for those early summer days.

INGREDIENTS:

12 lychees
1/2 Caribbean Red papaya, chopped into 1" pieces
1 tbs rice vinegar
2 tbs extra virgin olive oil
1 lime
1" fresh ginger, grated
1/2 cup Greek yogurt
2 tsp poppy seeds

Yield: 4 servings

DIRECTIONS:

1. Peel the lychees, discard the seeds and chop into quarters.
2. In a large bowl, add the lychees and papaya.
3. In a small bowl, whisk together the balsamic vinegar, olive oil, juice of one lime, ginger, yogurt and poppy seeds.
4. Add the dressing to the fruit bowl and gently toss. Refrigerate for 2 hours.
5. Toss gently just before serving.
