Corn with lime basil pesto

For parties and appetizers, you want finger food. Corn usually doesn't fit the bill, unless you cook it in the husk and then cut into 1" to 2" rounds. Perfect for dipping into this lime basil pesto.


1 stick unsalted butter, softened
1 tsp garlic, minced
2 small or 1 large lime (3 tbs juice)
3 tbs basil pesto
4 ears unhusked corn
1/4 cup crumbled gorgonzola cheese, for topping

Yield: 20 rounds and 1 cup of lime basil pesto
Prep time: 10 minutes, plus 20 minutes of cooling

How to juice a lime


1. Place unhusked corn in microwave. Microwave on high 3 minutes. Remove and let cool.
2. Meanwhile, add the butter to a small microwavable bowl. Microwave on high 20 seconds or until melted. Add the garlic, juice of the limes and basil pesto. Stir to combine.
3. Unhusk the corn, removing leaves and silk. Slice the corn into 1" to 2" rounds. Serve with lime basil pesto for dipping.
