SlimCado lime mousse dip

Oh, it's guacamole. But with the touch of vanilla it moves the dip to the avocado's sweet side. It's late April, so the SlimCado I found on my tree is an early one. The season doesn't rev up until mid-May, so the avocado and this dip are harbingers of the season to come.


1 SlimCado avocado
2 small or 1 large lime (3 tbs juice)
3 tbs honey
1 tsp vanilla
1/4 tsp salt
1/8 Groovy CoconutTM, shredded (about 1/4 cup shredded)

Yield: 2 cups
Prep time: 10 minutes, plus 1 hour of refrigeration

1. In a medium-sized bowl, mash the SlimCado until relatively smooth. Add the juice of the limes, honey, vanilla and salt. Cover the surface with plastic wrap and refrigerate for at least an hour.
2. Just before serving, tip the bowl to pour off any water that has surfaced on the dip. Add the shredded coconut on top and serve with chips.
