Side Dish


Cranberry Kumquat Relish

Combining the relish stars of the East and West makes for a festive side dish or complement to ham or poultry. Be sure to reserve a few whole kumquats for garnishes.


3 cups fresh cranberries (usually 1 package)
3 tbs frozen apple juice concentrate
1 small tomato
15 to 20 kumquats, chopped finely
1/4 cup red onion, chopped finely
1 tsp fresh jalapeño pepper, minced

Yield: 4 cups
Prep time: 30 minutes (includes cool-down time for the cranberries)


1. In medium saucepan, heat cranberries and apple juice concentrate until cranberries start to break down, about 10 minutes. Let cool.
2. Stir in remaining ingredients. Cover and refrigerate until ready to use. Serve with poultry or ham. Also excellent on leftover-turkey sandwiches.
