Guava Java Cake

It's coffee cake made fresh and sweet with red guava. Try this recipe or add red guava to your favorite coffee cake recipe. You may want to adjust the other liquid ingredients, or not. Most recipes will be moister with the addition of guava. You may find yourself lowering the amount of added sugar; red guava is that sweet.


1 stick butter, softened
1/2 cup brown sugar
3 eggs
1 tsp cinnamon
1 tsp coconut extract
2 cups flour
1 tsp baking powder
3 red guavas
1/2 cup chopped Groovy® coconut

Prep time: 15 minutes plus 50 minutes of cooking

1. Preheat oven to 350 degrees. Spray an 8"x8" baking dish with cooking spray.
2. To soften the butter, put in a microwave-safe bowl and microwave 30 seconds on medium power.
3. In a large bowl, using a pastry cutter, combine the butter and brown sugar.
4. Using a mixer on low, add the eggs, cinnamon and coconut extract. Mix thoroughly.
5. Gradually add in the flour and baking powder.
6. Cut off the ends of the guava. Cut in half and remove the seed centers and discard if you desire.* Chop into chunks.
7. Using a food processor, puree the guava. Add the puree and fresh coconut to the cake batter.
8. Pour batter into the prepared baking dish. Bake for 45 to 50 minutes, or until a knife can be pulled out of the cake's center clean.
9. Remove from the oven. Let stand 15 minutes. Then cool on a wire rack.
