Red guava mug cake

Guava takes a little more effort, but it's well worth it. For the cook, it's your prerogative while making guava for another dish to throw an extra guava in the pot to enjoy a treat that you make just for yourself.


1 red guava
1 tbs. vanilla Greek yogurt
1 tbs. coconut oil
1 tsp. vanilla extract
1 tbs. honey
1 egg white
1 tsp. baking powder
1/4 cup all-purpose flour

Yield: 1 serving
Prep time: 10 minutes, plus 15 minutes of cooking and 2 minutes of microwaving.

How to cut a guava


1. In a medium saucepan over high heat, add 2 cups of water and bring to a boil. Peel the red guava and cut in half. Add to the water, reduce heat and simmer for 15 minutes. Remove from heat and let cool. Scoop out the seeded interior and chop into small pieces.
2. In a mug or Mason jar, add the yogurt, coconut oil, almond, honey and egg white. Stir to combine.
3. Add the baking powder and flour to the mug and stir to combine.
4. Gently fold the guava pieces into the mixture.
5. Microwave approximately 2 minutes.
6. Serve warm.
