Tomatoes and ginger are a fantastic duo - and no place better to test this than a festive bruschetta. And yes, there's no garlic. It's ginger's bruschetta now.
1 loaf French bread, sliced
1" fresh ginger, peeled and finely chopped
4 plum tomatoes, diced
1/3 cup fresh basil, chopped
1 tbs balsamic vinegar
1 tbs extra-virgin olive oil
1/2 tsp each salt and pepper
1/8 cup Parmesan cheese, shredded (optional)
Yield: 2 cups
Prep time: 20 minutes
In a medium bowl, combine all the topping ingredients (except for cheese). Spoon onto French bread slices, then sprinkle cheese on top.
