TROPICAL CHICKEN SALAD WITH GUAVA
Make a chicken salad worth crowing about by adding coconut, dragonfruit and red guava to it.
1/2 small dragonfruit
1 Florida red guava
2 tbs Groovy CoconutTM, shredded
2/3 cup precooked chicken, cubed
1/4 cup vanilla or plain Greek yogurt
1 tbs olive oil
1/2 tsp mustard powder
1/2 tbs sugar
Yield: 2 servings
Prep time: 15 minutes
1. Cut the dragonfruit in half. With a large spoon, scoop out the white speckled interior. Cut into small cubes.
