COCONUT PAPAYA OATMEAL SLEEPOVER
Combine, stir and refrigerate the ingredients at night, and enjoy this the next day. It's as simple as that. Caribbean Red® papaya is such a big fruit that I usually have some left over from the evening's salad to toss into this oatmeal mix. And I can always grab a handful of shredded Groovy CoconutTM from my freezer to make the dish. There are great breakfasts in your future when you treat tropicals as kitchen staples.
2/3 cup regular rolled oats
1/3 cup skim milk
5 or 6 oz low-fat coconut Greek yogurt
2 tbs honey
1 tsp cinnamon
1/8 cup shredded fresh Groovy Coconut
1/8 cup chopped Caribbean Red papaya
2 tbs sliced almonds
Yield: 2 servings
Prep time: 10 minutes, plus 8 hours of refrigeration.
1. In a pint jar, combine the oats, milk, yogurt, honey and cinnamon. Stir. Add the Groovy Coconut and chopped Caribbean Red papaya. Stir gently to combine.
